Cookie Dough Billionaire Bars

I found this picture on a Google Plus Community Page and Live A Sweet Life and wow!  It just looks incredible.

Cookie Dough Billionaire Bars can be described as a layer of shortbread, a layer of caramel, and a layer of cookie dough.  And of course it’s topped off with chocolate.

Once I’ve finished my diet (yes, seriously) I will give this one a crack.

Here’s the Recipe:

** Ingredients **

Shortbread:
1/3 cup unsalted butter, softened
1/3 cup granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup all-purpose flour

Caramel:
About 15 soft caramel candies, cut into pieces
2 tablespoons heavy cream

Cookie Dough:
1/2 cup unsalted butter, softened
1/4 cup granulated sugar
1/2 cup light brown sugar, packed
2 tablespoons heavy cream
1 teaspoon vanilla extract
3/4 cup all-purpose flour
1/8 teaspoon salt
1/2 cup semisweet chocolate chips

Chocolate Glaze:
4 ounces semisweet chocolate
1 tablespoon unsalted butter

** Instructions **

For the Shortbread:
Preheat oven to 350F. Line an 8-inch square baking pan with parchment paper.
Beat butter and sugar until light and fluffy. Add vanilla and salt, beating until combined.
Add flour and mix. Dough will be crumbly and a little difficult to deal with.
Press dough into bottom of prepared pan.
Bake 18-22 minutes. Cake should turn a golden colour.
Cool.

For the Caramel:
Place caramel and cream in a small saucepan over medium heat. Stir constantly, until melted.
Pour over shortbread and spread evenly.
Put in freezer until set.

For the Cookie Dough:
Beat butter, sugar, and brown sugar until light and fluffy.
Add cream and vanilla, and mix well. Add flour and salt, mixing until combined.
Stir in chocolate chips.
Spread cookie dough evenly on top of caramel layer.
Place in freezer while making the glaze.

For the Chocolate Glaze:
Place chocolate and butter in a microwave-safe bowl. Heat until chocolate melts when stirred.
Spread evenly over cookie dough layer.
Place in freezer until set.
